FILLET knives whats your fav brand & style ive got dozens but i allway end up useing a little platic handled rappala knife it allwas sharpe never looses its edge just a good thing Big smileBig smileBig smileregards bob

got a couple of old bone handle carving knives. 200mm blades, sheffield steel. only need a touch up on the steel and they will shave you. don't get steel like that anymore. also have a J. MARTTIINI......mick

Have had a few Bladerunner Filleters in various lengths for many years, not sure if they are still available, but have been good knives overall.
Martinni are good, most of the Rapala knives made by them, even more so, now I think Rapala bought them out.
Also Dexter Russell, professional quality, usually have white handles, find them at butcher and cooks supply shops, and I think I saw them at King of Knives once.

Schrade Uncle Henry 167 UH. The best filleting knife I have ever used. Flexible blade which is super sharp and holds it edge (unlike some other knives). My original one is 16 years old and still going strong. These are no longer made in the USA as the factory closed down 1904 - 2004. The old timer pocket knives were also made by Schrade. Now these are all made in china and the steel is not the same apparently.

I use a plastic handled RAPALA as well. Wasn't expensive but it stays sharp

Bob, I have an older Buck USA large filleting knife. It is a good knife also. All the new Buck knives are also made in China apparently.

I have quite a few knives that I use for filleting from the cheapie $5 dollar wooden handle Kmart knives to Ballard, Kershaw and Rapala. Those cheaper ones - with a mild steel, I just touch them up with ceramic knife sharpener every now and again. The cheapies are good for those fish with thick rib bones. The better knives are good for "filleting" those rib bones off the fillet - if you know what I mean.

Swibo seem to go all right to Bob and have a pretty good range. Also victorinox are good also and reasonable priced. Don't go to King of knives to dear.If you know some at a meat works get onto them they usually get them at a good price

I also use Swibo knives, you can get them in different grades of flexibility, I prefer a less flexible knife. I also have a Swibo boning knife.
The older I get the more I learn.

Swibo for me as well. I also have a long thin Rapala that is good for bigger Spanish Macks. Because it has blade less than 1cm high it doesn't 'clog' as much if it is a fatty fish.
Plastic is for storing lures, not making them.

yep,i agree you cant beat a boners knife that's half worn down,swibo ,victorinox even mundial.they take longer to sharpen but they hold their edge for a long time.my favourite filleting knife is an 1970's vintage timber handles Japanese no name,the blade stays sharp a long time and would kick the arse of most modern expensive filleting knives they really don't make like this anymore

have you got one of these Bob?,as Steiny said they're made in China now but seem to be pretty good,this ones the one I take fishing when I'm walking big distances not the best for filleting but a great multi purpose knife

Chris that wooden handled knife looks like the Victorinox knife I used when I fished a lot, great steel only drawback was the wood. I like wood but prefer the moulded handles. As well as lures and reels and books I also collect custom made knives which are somewhat dearer than lures. If there is any interest I could show some photos. I know that this is a lure site. Like collectors lures too good to use.

i have a green river butchers knife i got in darwin about 25 years ago. it's a slicing knife, hardest steel i've ever tried to sharpen, but when you do it right the edge lasts longer than any other. my wife worked at teys abbotoir for years, got some worned down boning knives.....mick

My brother in law in Cooktown uses one of those log, thick bladed bush knives (Bowie imitation) and he does pretty good with it too, he also uses the same knife to skin his mackeral. He is a bit slow with it though.

did the green river butcher knives have wooden handles?,pretty sure they gave me one when they attempted to teach me to slice when I was 18.only hassles with them was that they weren't stainless steel.its all changed now white handles to show any contamination and high grade stainless

no Bill its a Japanese blade ,hard to see in my blurry photo's but its got japan stamped on it,I didn't know Victorinox made a tinber handled knife.Iam not a collector but if someone wanted to start a collectors or hunting knives thread on here somewhere that'd be pretty good

I think ive seen those ones mate,great hunting knives.the one in my picture is pretty generic its got a knerled rubberised handle

The Victorinox filleting knife is my favourite, also have vic. cook's knife and boning knife. All good tools.

j marttiini, worn victorinox boner, old carving knife (has engraving but hard to read)and green river butcher. some green river knives are stainless chris this one is high carbon......mick

that's it Mick,mine used to go rusty if I left it in the steriliser too long.i see a lot of worn down boners knives like your victorinox ,would you believe chicken boners take brand new boning knives and grind them to this stage before they even start using them?,thanks for sharing Bill and Mick

they look good old knives stieny, would have been made from top steel. here are three taylor got me for my birthday. top is victorinox 210mm flexy blade, good for skinning fish, middle is a giesser 180mm medium flex blade, good fillet knife. bottom is a victorinox swibo 120mm stiff blade, be good for cutting through bone.going to try and get some stiff leather and make sheaths for them, had some but don't know what happened to it........mick

my old shelham premium stock knife. dressed out hundreds of rabbits. dropped it over the side of the boat out at inglewood, caught it by the tip of the blade arms length in the water. don't have reflexes like that anymore ........mick pick and tweezers slide into the end of the handle.

It seems a lot of people on here keep asking for knifes by George Lee Sye. I’ve been very lucky to be able to inherit a numbe of them from my late grandfather, I do love them. I have attached a picture of two of them. I would love to know any info on them? Seems to be hard finding information on him. Is it worth getting them valued for insurance reasons?
