I've posted theories why fish may strike different lure - none having to do with matching a prey species/ everything to do with lure characteristics and presentations that work.

Ive tied a hook to a small twig (stick) and caught fish just to prove a point..the stick caught fish as it hit the surface...it caught fish when slowly jigged...and it caught fish when left to sink in front of a snag...put basically anything in the right zone at the right time and it will get hit...i dont think its as indepth as some make out.

Ever switch baited a marlin?
Tease them right to the transom, exciting stuff! The teaser is pulled into the boat, and replaced with a loaded bait, and pow! Your on.
I have heard a story where to prove a point, a deckie in Cairns slipped off one of his dunlop volley, s and pinned a 16/0 through it. They teased a big black to the transom and carried out the switch as planned, but instead of a bait, the volley was used, and yep, good hook up!

In most freshwater situations if a fish is actively feeding any thing that moves is potentially a meal. Most food choices for our freshwater fish is not detrimental to its wellbeing except something bigger.
In a lot of our waterways clarity of the water dictates what we use in most cases it's brackish to muddy.
I find very clear water fishing a little bit harder to fish as they are more visually aware of their pray and a more appealing lure needs to be used.

Freshwater species may hit one lure design and not another of the same size but different design used with the same presentation.

There is one thing that may explain why some lures are targeted over others. In a fish's DNA there may be a general recognition of naturally occurring shapes such as that of a sunfish:
